After Dinner Mint Keto Fat Bombs

These bite sized little fat bombs are the perfect little sweetener for after dinner! Quick and easy to make .

Ingredients:

150g Dark Chocolate – I used 90% cocoa Lindt Chocolate

1 1/4 cup shredded coconut

3 tablespoons shaved coconut

6 drops Stevia Liquid

1/2 teaspoon Peppermint Essence (more if you like the peppermint strong

Instruction:

  1. Place dark chocolate in a medium, heat proof, microwave-safe bowl. Microwave uncovered for 1 minute, stir and microwave another minute until almost melted. Stir until completely melted.
  2. Add Stevia and Peppermint Essence to melted chocolate mix in well.
  3. Add the coconut into the chocolate and mix well until coated.
  4. spoon the mixture into the mini paper patty pans, to keep them compact and tight, squash them into an ice tray and place in freezer until hard then they can go in the fridge and eaten from there.
  5. Makes 20.

These would also be just as awesome made with just the shaved coconut if you would prefer.
