Oh the aroma in the kitchen when jam is being made, there is nothing like it!
Before going Keto I struggled to get my jam to set, I was forever buying Jamsetta but still didn’t have great success I never really got that “Goldilocks” consistency.
Chia Seeds are great thickeners
Knowing what I know now I think even if I wasn’t low carb I would still use Chia seeds to thicken my jam. They are champions at thickening puddings, stews, jams, gravies and just about anything else that needs thickening. If you want your jams to look smooth and silky you can blend Chia Seeds in a blender until they resemble a flour.
Use these little seeds to your advantage.
They’re a perfect companion for jams and I always get the right consistency with them.
Chia seeds don’t look out of place either when blended into the fruit they take on the role of looking like seeds from the berries!
Chia seeds are a super food
Chia seeds contain large amounts of fiber and omega-3 fatty acids, plenty of high quality protein, and several essential minerals and antioxidants.
They may improve risk factors for heart disease and diabetes, lead to better digestive health and increase blood levels of heart-healthy omega-3 fats.
Chia seeds are small, flat and oval-shaped, with a shiny and smooth texture. The color can range from white to brown or black.
Because of their relatively bland flavor, chia seeds can be added to pretty much everything.
Here’s what you need
- 500 grams fresh strawberries
- 2 tablespoons lemon juice
- 2 to 3 tablespoons stevia Or xylitol (I used 1.5 of each)
- 2 tablespoons white chia seeds
Mash the fruit just a little if you love keeping the chunky bits or go the whole hog until smooth!
