Cauliflower is one of those low carb vegetables that’s super versatile. Low carbers have found ways to disguise things that are forbidden on the diet using it.
Cauliflower Rice is such an awesome replacement for Rice that is considerably higher in carbohydrates which on a ketogenic diet/lifestyle has to be withdrawn from the diet.

How to make Cauli Rice…
All you need is a Cauliflower and a Vegetable grater.
For plain, cauli rice…
- grate the cauliflower into a microwave safe bowl with a tablespoon of water
- microwave for approximately 40 seconds, if not cooked enough put back in for a further 20 seconds, keep checking, check with a fork to see if it is cooked enough to your liking
- serve up with your favourite curries, stews and whatnot 🙂
Note: I add a tablespoon only of water to the cauliflower rice so as to keep it from going soggy.
