Low Carb Zucchini Fries and Dip

I had some Zucchini Fries at Grill’d not that long ago, gee they were nice. I thought I would have a go at making them myself. They are really good as a side dish for practically anything, or just with the Greek Yoghurt and Chive dip.

Servings 4 servings
Ingredients
  • 2 medium zucchini
  • 2 eggs
  • 1 tbs heavy cream
  • 2.5 oz pork rinds approx. 1 cup
  • 1/2 cup grated Parmesan
  • Salt to your liking
  • Prepare dip while fries are baking. Combine all dip ingredients in a small bowl and set aside in the refrigerator until ready to use.

 

Instructions

  1. Preheat the oven to 200C.
  2. Cut the zucchini into lengths like wedges, leaving peel left on.
  3. Add the eggs and cream to a bowl and stir well.
  4. Place the pork rinds in a food processor and process into breadcrumbs. Add the Parmesan, process again, then place them in a second bowl.
  5. Dip each piece of zucchini into the egg mixture, then the pork rind mixture, and then place on a baking rack over a baking sheet.
  6. Roast for 15-20 minutes until starting to crisp at the edges. Serve warm.

GREEK YOGURT CHIVE DIP

  • 1 cup (285 g) plain greek yogurt
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh chives
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
